One of our favorite Chinese dishes for the Chinese New Year has got to be the Chinese Fried Rice. It’s easy to cook and already a meal by itself. There are many versions of this dish, depending on what ingredients you have on hand or you want to include. We’re sticking with the basics here in our Chinese Fried Rice Recipe. Don’t forget to give this a try this weekend!

CHINESE FRIED RICE
Ingredients:
2 tablespoons cooking oil
4 cloves garlic, minced
1 white onion, minced
3 Chinese lap cheong sausage, cut into small pieces
2 large eggs, lightly beaten
1 carrot, diced small
1/2 cup green peas
1/2 cup corn kernels
4 cups overnight (leftover) steamed rice
1 tablespoon fish sauce
3 tablespoons soy sauce
3 dashes ground white or black pepper
Salt, to taste
Method:
Heat cooking oil in a wok or skillet. Scramble eggs in a small bowl and cook in the wok, turning upside down after a while so both sides are well cooked. Set aside to cool down.
In the same wok, saute onion and garlic until soft. Add the Chinese sausage, stir and cook for about 1 minute. Add the vegetables and stir well. Add in the rice and stir to combine well with all the ingredients.
Add the fish sauce, soy sauce, ground pepper, salt and continue to stir-fry for approximately 10 minutes.
Chop scrambled eggs into small slices. Add into the rest of the mixture in the wok and combine well. Remove from heat and serve hot.
